Are you ready for the best potato gateau ever?

Best thing ever to cook when you are on the low side of income: potatoes.
Happens to everyone to have some low moments right? No need to be ashamed of it.

Cooking tips come in handy especially when it’s about spending less and cooking something that still is super delicious.

Potatoes has always been a great part of our everyday diet, since the dawn of time.

Delicious, nutricious and cheap. Incredibly cheap.
Good baked, fryed or boiled. Just don’t eat them raw.

In today’s potato gateau recipe we are going to first boil it and then bake it too. Double trouble for an extra tasty Italian potato cake.

Too good to be true, this easy potato gateau is very simple to cook and goes down well with everything.
I have made some steamed broccoli and a salad to go with this Italian gateau cake, which by the way works just as a main dish, depending on the portions.

This lovely potato gateau takes 40 minutes in the oven but it is worth every second of the wait.
You can definitely make this ahead and re-heat.
If you are eating it the day after remember to keep refrigerated. My dad would agree that it’s the best breakfast ever.

My potato gateau version for today is gonna be really simple to keep up with the basic principle that pushed me to cook it.
Thought this can be upgraded for the ultimate feast. In fact you can add all sorts of cured meat to it, like Parma ham or Mortadella, or even more cheese. Swiss gruyere and whatever come to mind really.

Without further ado here’s the recipe:

Ingredients for 2 serves of potato gateau (  tray )

2 big potatoes for boiling
100gr cooked ham
100gr mozzarella
80gr salami
50gr of grated parmesan
1 egg
1 tsp butter
finely chopped parsley
breadcrumbs
salt
pepper
nutmeg

 

Potato gateau – cooking method

Best potatoes for this are the yellow ones, so get hold of those and starts by washing them throughly under cold water, then boil them in cold water with a pinch of salt.
To test they are cooked, pich it with a fork, it should be soft and never hard.

When the potatoes will be fully cooked, peel them and mash it.

In the mean time chop the ham. the salami and the mozzarella in little cubes.
Transfer everything into a medium bowl.
Add 1 egg, grated parmesan, the parsley, pinch of salt and a good pinch of black pepper, and king ingredient: a pinch of grated nutmeg.

Mix well all the ingredients with a spatula, and leave it aside for a moment.
Grab you tray and grease lightly with butter.

Dust it up everywhere with some breadcrumbs. This will give you a deliciously crispy outcome.
Fill the tray with the potato gateau mix and level it up to the top with a spoon.

Dust the top as well with more breadcrumbs. In this case natural breadcrumbs work best but you can also use the golden one if you prefer.
Bake in a preheated oven for 40 minutes @200 C
