For now, let’s concentrate on today’s recipe.
Here’s all the ingredients you need to make a super tasty penne vodka pasta!
Ingredients (for 2 bowls of penne vodka pasta)
120 gr penne
100 gr cherry tomatoes
70ml double cream
50ml of vodka
1 garlic clove
1/2 diced onion
good extra virgin olive oil
Resist to the temptation to drink vodka instead of putting it into the sauce, and just buy a small shot version bottle.
afterall 50 ml it’s all you need. There is no point buying a big bottle.
In a frying pan pour the oil. Make sure it’s extra virgin olive oil for a better rich taste.
Add the chopped garlic and the onion. Let it shallow fry for a little bit. Be careful not to burn it.
Turn the heat up and wet the onions with the vodka. Nevermind the brand, just make sure it’s plain vodka, no added flavourings.
Let it evaporate. Be careful not to burn the pan in the process.
Add the cherry tomatoes, which you previously cut in halves, fix with salt and black pepper. Reduce the heat now and cook for 7 minutes. Stir every now and then.
When the tomatoes are soft, transfer everything in a blender, add 70ml of double cream, and blend everthing to a silk smooth consistency.
Bring the creamy vodka sauce back in the pan on a low heat, cook for another minute.
Cook the penne al dente.
Once pasta is done, drain it well and add it to the sauce in the pan and toss.
Sprinkle some grated parmesan and some parsley on top.
