How many ways of making chicken breast rolls are there?
These chicken breast rolls I am going to show you today are just one of my favourite and I am sure you are going to love it too.
It is not the traditional chicken breast rolls you may find here and there on the web but It is packed with flavours and stays so juicy inside even though it might not look like it.
I prefered these chicken breast rolls without sauce to top them, I just made them with their filling and some nice cheese on top.
You can of course modify this as you wish and put some creamy beshamel or white sauce on top.

Ingredients for two chicken breast rolls
2 medium chicken breasts
2 thin slices cooked ham
About 100gr cooked mushrooms
cheese of your choice
Chicken breast rolls – Cooking method
First thing to do is to cook the mushrooms.
Wash them quickly then slice it thin. Saute the mushrooms in a frying pan with some olive oil and garlic. Season the mushrooms with salt and pepper.
After that grab a sharp knife and cut the chicken breasts on the side to open it.
You can flatten the chicken breast and do the rolls like a did or just cut on one side (where you will put the filling into) and keep the breast like that.
I cut the breast open and then with a meat mallet just flatten it a bit.
Place the ham slice first on the chicken breast roll, then the mushrooms, and finish off with you favourite cheese.
Start from one side and roll the chicken breast to close it.
A little drizzle of olive oil and it’s ready to go in the oven.
Cook your chicken breast in the oven for 25 minutes, flipping it on the other side half way through.
When your chicken rolls are ready sprinkle the top with more cheese and grill for 2 more minutes to melt the cheese.
