Avocado stuffed eggs – The recipe
You had enough, I know. Now that Easter is over, you probably don’t want to see eggs for the next 10 year. Not even in a postcard.
It’s ok, don’t worry. In today’s recipe we will only talk about eggs.
To be more precise, avocado stuffed eggs.
Benedicte, omelette, florentine, chocolate surprise eggs.. you might had it all, but you didn’t had the best avocado stuffed eggs.
This is an healthier version of deviled eggs. In fact I have used avocado only, no mayo, no cream, no mustard, no cheese. And as everybody will know, eggs and avocado are very good for weight loss. So this can definitely be classified as one of the many healthy avocado recipes.
Avocado, in fact, is part of the family of healthy fats, those ones that are good for you (organic almond butter is another example)
Unlike butter or lard, avocado is basically fat heaven for your organism.
Though it’s good, you should never exced, it’s always a fat.
Trust me when I say that these avocado stuffed eggs are going to be the best choice to get back to a healthier and proteic life style.
How to cook avocado stuffed eggs?
Easier said and done.
The only raccomandation is that you cook the eggs to a hard boiled point.
Should take 12 minutes all together.
Choose only fresh ripe avocado, and mash it as much as possible.
Mash it with a potato masher if you think, I have used a simple fork.
What to make with avocado and eggs?
I have kept it very simple with a basic mixed leaf salad and a fat free chilly mayo dip.
Protein, carbs, vitamin and good fats: they are all in there.
These are great for a rich starter or for tapas selection lunch.
Lets see what you need to make these yummy avocado stuffed eggs.
Ingredients (for 8 halves avocado stuffed eggs)
4 small eggs
1 small ripe fresh avocado
1 tsp smoked paprika
1 tsp garlic powder
1/4 tsp salt
Avocado stuffed eggs – get it done
As you read above, it needs 12 minutes more or less to have hard boiled eggs.
Save time and start with that, meanwhile you’ ll prepare the rest of the ingredients.
Cut the avocado in half, take the seed out, and take the pulp out with a spoon.
Put it in a bowl, and mash it up with a fork.
Prepare the spices on your table, so that you have everything there in one place.
By the time you finish with that, the eggs will be ready.
Let them cool down a bit, then peel it.
Cut the eggs in half and separate the yolks from the white bit.
Put the yolks in the avocado bowl. Add all the spices and mix it up.
Fill each egg with a spoon of avocado mash.
Sprinkle some dried parsley on top and serve.
Here you have it: delicious avocado stuffed eggs.
