Crispy pancakes recipe – homemade taste
Ever you ever wondered how do they make those nice crispy pancakes they sell at the store?
Well today I am gonna tell you with my personal crispy pancakes recipe.
This is the closest result I got so far, and it’s amazing.
Crispy pancakes is the typical food for a quick hunger fix.
When you don’t have any idea what to cook for dinner or simply just to satisfy your salty cravings.
In some countries you can find them at the frozen food section, but they are getting hard to find, especially on my side of the pond.
If you have no idea what am I talking about, don’t worry. It just means that you have missed one of the most tasty thing ever and you need definitely to catch up with my crispy pancakes recipe.
You can fill crispy pancakes with everything that your creativity suggests.
Mushrooms, aubergines, courgettes, ham, chorizo. Really anything.
I have made these today with two different fillings.
The first batch of crispy pancakes was with a filling of cheesy spinach and for the second I went classic with ham and cheese.
It takes very few ingredients to make this, so not only it’s tasty but also very cheap.
You can also make lots of crispy pancakes and freeze it for later use.
Without taking too long I leave you with the ingredients.
Crispy pancakes recipe – Ingredients for 8/10 pancakes
1 glass whole milk
100gr all purpose flour
In a sauce pan, put the butter and the milk, add a pinch of salt and let the butter melt completely.
Add the flour all together and mix till it will have a soft dough consistency.
Set aside few minutes to cool down a bit.
When it will be cool enough to handle with bare hands, give it a quick mix. Cling film it and put in the fridge for 20 minutes.
After the dough is completely cooled, take it from the fridge and roll it to be more or less 1/2 centimetre thick.
Using a round cookie cutter, cut off 10 disks with 7/8cm of diameter.
Take one disk, put some filling of your choice then fold it on one side to seal the edges.
Make sure you seal the edges properly or the filling is gonna spill in the oil. Not nice trust me.
Double coat this by first putting it in breadcrumbs, then dip it in the egg wash, then breadcrumbs again.
This will make them nice and crispy.
Repeat the same process for the other crispy pancakes.
Deep fry them in a good amount of sunflower oil and serve hot.
